Description and details
The coffee is washed, stripped and fermented, using the traditional method, in the tanks for a couple of days (the time varies according to the temperature).
Later, the beans are washed in tanks or in small channels, then selected by skimming, then left to dry in the sun.
The coffee obtained is full-bodied and consistent, with a sweet taste of caramel and kiwi, with an aroma of apple, peach and caramel.

Colombia Cañon de los Idolos
The Finca El Eden, in Antioquia, in the region of Huila, north-west of the capital Bogotá, produces only a few bags of coffee per year and is specialised in coffee varieties for microlots and experiments.
The business is family-run and the passion handed down from father to son: the coffee is hand-picked in several stages to pick only the perfectly ripe coffee cherries.
This speciality was then treated at the Mill of Cañón de Los Idolos, where the coffee was completely washed, stripped and then fermented as per tradition in fermentation tanks, for a time varying from one to two days, depending on outdoor temperature.
Afterwards, the beans were washed in tanks and small channels and sorted by skimming the floats before drying, which took place completely in the sun, in a natural way.
This process gives a delightfully full-bodied and consistent coffee.
