Initially, it opens with bitter shades that are reminiscent of dark cocoa and mountain herbs, followed by sweet and soft notes of amaretto. The body is creamy and reminiscent of milk and toffee. single-origin comes from the village of Ulian, on the island of Bali where, on an area of only 90 hectares, few farming families grow several varieties of Arabica coffee. The coffee beans in this lot come from plants grown on hilly soil, in the shade of fruit trees such as oranges and the local agricultural system provides for the recycling of substances: the coffee pulp is deposited on the ground as compost. The coffee is harvested manually and selected by colour and size. Subsequently, a washing process in tanks for 32 hours is followed, to reach the ideal degree of acidity. Finally, it is left to dry in the sun and air, on patios, for several days. No machines or chemical fertilisers are used at Ulian: every aspect of production involves human beings and their manual skills. Selected with care and attention, this lot is an excellence: its homogeneity and quality are guaranteed by traditional methods. In the cup is well-balanced, with great personality and creamy body.
