Indonesia's Kopi Luwak, or civet coffee, is the rarest coffee in the world. Originating from Indonesia, this unique type of coffee is made from the bio-fermentation of coffee berries that are ingested by the palm civet, the Luwak, a small wild marsupial that eats them. Luwak's digestive enzymes only affect the outer part of the berry, eliminating some of the proteins that give coffee its bitter taste. The excreted berries are then harvested, the outer shell is removed and the beans are then ready to be roasted. The all-natural process returns a new bean with a very special and unique flavour: kopi luwak coffee is the rarest in the world. Being so rare and certified, civet coffee has a very limited annual production. Our Wild Gayo Luwak coffee comes from South East Asia, more specifically from the Gayo highlands of central Aceh. It is cultivated by smallholders organically and without fertilisers, in the shade of lamtorogung, orange and avocado trees, whose prunings also provide good organic fertiliser, so it can withstand the sun and slowly enrich itself with flavour. A speciality that the Luwak, Civet of the Palms or Owl of the Palms, a small wild mammal of the place, does not resist: it eats it and chooses only the best perfectly mature beans. Its digestive enzymes only affect the outer part of the berry, eliminating some of the proteins that give coffee its bitter taste. They then digest and defecate the coffee beans: the excreted berries are collected, stripped of their outer shell and dried. This very special natural biofermentation produces a new bean with a special and unique flavour. Only those originating from civets in the wild can be called Wild and are certified. For this reason, annual production is very limited and the sale of coffee rare. Our Indonesia Kopi Luwak is unique: it has a full and important body, a smooth, earthy and sweet taste profile with a clean aftertaste. This single-origin speciality, being so rare and certified, has very limited annual production, which is why it is the rarest coffee in the world.
