In the Sigri plantation, quality control begins in the fields: the ripe berries are carefully harvested by hand and checked to ensure uniformity. The whole process is focused on offering the highest quality and after being washed with the traditional three-day fermentation method and removed from the wash every 24 hours, it is fermented with total immersion in water for another day thanks to which a superior coffee is obtained. The coffee that is born has a fruity, peach and cherry aroma, and a pleasantly citric taste of dark chocolate. Papua Nuova Guinea Sigri
The Sigri Plantation in the mountainous region of the island, thanks to the cold climate due to the altitude and the abundant rainy season, produces the finest variety of coffee in the country. It employs about 6000 people, to whom it guarantees care, education and assistance and protects the environment with a policy of long-term agricultural sustainability: the coffee grows in the shade of the Casurina and Albizza trees, a favourite with parrots, and as many as 90 different species of birds live here, including the Paradisea di Raggi, the nation's symbol also reproduced on the bags. The Sigri Process aims for the highest quality: the berries are selected and harvested by hand only when perfectly ripe because they must be picked the same day. Then they are washed with a three-day fermentation method that provides for them to be removed from the wash every 24 hours and then continues with a total immersion in water for another day, thanks to which a superior quality of coffee is obtained. A slow drying in the sun and a careful classification by hand increase its quality.
